With the weather cold like it is...I'm gonna make a big pot of 3 Meat Chili.

Recipe:

Brown then drain the 1 lbs packs of Ground Beef, Venison, and Pork...set aside.

Open two large cans of Crushed Tomatoes with Garlic...set aside.

Open two cans of Red Kidney Beans...drain and set aside.

Open 2 bottles of Dos Equis (XX) Beer...sip on one while setting the other aside.

Chop up some whole fresh Jalapeños...

Finely chop up 3 Bell Peppers...Red, Green , Orange or Yellow...set aside

Finely chop 1 large Red Onion...set aside.

In a Sauce Pot of proportionate size to the amount of ingredients to be introduced:

Alternately Layer the Crushed Tomatoes, Ground Beef, Chopped Red Onion, Ground Venison, Chopped Bell Peppers, Ground Pork, Kidney Beans, and any Chili Peppers / Chili Powder / and then the chopped Jalapeños...then pour 1/3 of the Dos Equis beer evenly to the mix...one layer upon the next... same order... till all the ingredients are added to the pot.

Place pot on simmer, stirring occasionally until all the ingredients blend ...finish 1st beer...open 2nd beer...Sip & Stir

Place the pre opened Guacamole, Sour Cream, and Tex Mex cheese blend on the table...along with Chili Bowls and Teaspoons...and the rest of the 6 pack.

Slice the fresh bread of your choice ( say French Artesian ) down...maybe even toast in the oven with a pat of butter on top...all the while stirring the pot and drinking the beer...

When Chili is piping hot...ladle into the bowls...adding the Tex Mex cheese on top...then a dollop of sour cream, then a thin slice of Jalapeños...and garnish the plate the bowl is on with Guacamole and Blue Corn Mexican Tortilla Chips. { Don't forget the salsa...it's in the fridge }

Pull the Dippin' Bread out of the oven...before it burns.

Open another Dos Equis...do a shot of Patron Silver Tequila...and ENJOY !!

Tonight's Menu:

Two Sirloin Steaks
...seared to perfection over Mesquite Wood Chips on the Grill...covered in a mix of Caramelized Garlic, Oregano, and Mushroom Caps...with Steak Fries and a Fresh Salad of NJ Beef Steak Tomatoes and Fresh Garden State Cucumbers on a bed of Romaine Lettuce drizzled with a Balsamic Vinaigrette...

Add a few bottles of Sam Adams Oktoberfest for the Chef.

Tonight's Menu:

Stuffed Meatloaf ( Mozzarella Cheese / Diced Orange & Green Bell Peppers ) with Mashed Garlic Potatoes and Brown Gravy, Fresh String Beans, and Steamed Cauliflower.

Complimented by a nice red wine...Bolla Valpolicella

Italian Sausage and Meatballs
in a home made gravy ( sauce )...with a side of Cheese and Spinach Gnocchi's...and a Fresh Salad with Ice Berg Lettuce, Jersey Beefsteak Tomatoes, Diced Green Bell Peppers, Shaved off the wedge Italian Parmesan Cheese, and Balsamic Vinaigrette...with a loaf of fresh Italian bread warmed in the oven with butter and fresh crushed garlic sprinkled on top.

...and a bottle of Bolla Valpolicella.

Prime Rib of Beef Tips Au Jus...
simmered in a Crock Pot...ladled over Steaming Hot Tender Egg Noodles...served with a small wedge of Ice Berg Lettuce covered with Cherry Tomatoes...Shaved Carrot...Sliced Radishes...Diced Green Bell Peppers...and Red Onion Rings. With Hot Buttermilk Biscuits and Melted Butter on the side.

Served with a nice Cabernet Sauvignon...

Baked Boneless Chicken Breasts
...with a splash of Fresh Squeezed Lemon while it bakes...served over Wild Rice with Snow Peas and sliced down Baby Carrots ...and a salad of Ice Berg Lettuce and halved Cherry Tomatoes, with Parmesan Cheese and Corn Bread Croutons...drizzled with Oil & Red Wine Vinegar.

Complimented by a chilled Sauvignon Blanc wine...

Homemade Crab Cakes
...lump backfin crab breaded with Panko Bread Crumbs, Old Bay Seasoning, Fresh Chopped Celery, Diced Red Onion, Lea & Perrins Worcestershire Sauce, Parsley, and a hint of Garlic...Pan Fried to a Golden Brown in Canola Oil...served with Corn Bread Muffins and Melted Butter...Wild Rice...and Homemade Tartar Sauce.

Complimented by a chilled Sauvignon Blanc wine...

Ingredients:

The Crab Cakes

  • 2 large eggs
  • 2-1/2 tablespoons Hellmann's mayonnaise
  • 1-1/2 teaspoons Dijon mustard
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Old Bay seasoning
  • Clove of Garlic
  • 1/4 teaspoon salt
  • 1/4 cup finely diced celery, from one stalk
  • 2 tablespoons finely chopped fresh parsley
  • 1 pound lump crab meat
  • 1/2 cup panko bread crumbs
  • Thin Layer of Canola oil in a skillet

Quick Tartar Sauce

  • 1 cup mayonnaise
  • 1-1/2 tablespoons sweet pickle relish
  • 1 teaspoon Dijon mustard
  • 1 tablespoon minced red onion
  • 1-2 tablespoons lemon juice, to taste
  • Salt and freshly ground black pepper, to taste

The 2nd best thing about Thanksgiving... Leftovers !!

Turkey and Cranberry Cornbread Stuffing Sandwiches on Wheat Toast with a hint of Mayo !!

Big Slice of Oven Warmed Blueberry Pie...with a scoop of Breyers Vanilla Bean Ice Cream.
